Grapes come from hillside vineyards in Campania and Lazio.
Made from Falanghina and Chardonnay grapes, selected and harvested by hand as soon as they are ripe.
Grapes are soft crushed and the skins removed at once; the clear must is fermented at a controlled temperature, with the addition of selected yeasts. The resulting wine is filtred to arrest secondary fermentation.
Usually begins in the February or March following the grape harvest to finish in October or November. During this period of fermentation sur lit, the autolysis of the yeasts given this spumante its characteristic bouquet and flavour. The wine ferments in the bottle for about three months before it goes on sale.
MOUSSE: White, lingering.
PERLAGE: Long-lasting, with tiny bubbles.
COLOUR: Bright straw yellow.
BOUQUET: Intense, fresh and pungent; outstanding elegance.
TASTE: Dry, but not harsh;
clean-tasting, elegant and harmonious.
Advice from the winemaker
To enjoy this sparkling wine at its best, drink within a year of the date of purchase. Serve at 6°-8°C.
Exellent as an aperitif or when welcoming guests; may also be served with fish, light hors d’oeuvres and delicately flavoured meat dishes.
