Grapes come from vineyards in the comune of Aprilia, part of the comunes of Cisterna and Latina, and the province of Rome.

Winemaking Technique

Grapes are picked by hand, pressed and de-stemmed before they macerate on the skins for 7 - 8 days at about 25° C. The must from the first-pressing ferments in stainless steel vats, then ages in barrels of Slavonian oak. After bottling, the wine continues to age for a further 5 - 6 months before going on sale.

Tasting notes

COLOUR: Ruby red with good depth of hue, acquiring garnet tinges with age.
BOUQUET: Full and fragrant, with a delicate bouquet of blackberries and bilberries.
TASTE: Attractively dry, well-structured with good flavour and a faint hint of tannins.
A noble wine with a robust style.

Advice from the winemaker

A wine with ageing potential. Allow to breathe before ser ving by carefully decanting into a carafe. Serve at 18° C.

Gastronomical suggestions

A perfect accompaniment for savoury pasta dishes, such as pappardelle in hare sauce, for roast or barbecued meats, and for mature cheeses.
